So, let’s prepare the filling for the croissants.

First, the beef tripe must be thoroughly rinsed and soaked in cold water for six to eight hours.

In this case, it is advisable to periodically change the water. Then rinse again and cut into strips 2 centimeters wide.

Now the filling needs to be dried. Place the strips of beef tripe on a wire rack and leave in the oven for two hours.
The temperature should be low so that the scar is not fried, but dry.

To keep the oven clean, it is best to place a baking sheet under the wire shelf
with baking paper, onto which grease will drip.

I can reassure those who are already familiar with the “flavor” of raw beef tripe and are skeptical about the idea of ​​drying this product in the oven. Croissant dough is very similar in consistency and composition to cookie dough. Oatmeal should be slightly poured in a mortar or chopped in a blender. Finely grate the apple. Combine rolled oats and flour, add an egg, add applesauce, a pinch of ground cinnamon, a spoonful of honey, and vegetable oil.

Knead the dough. It should be pretty cool. Divide the dough into three equal parts (this will make it more convenient to keep the size of the future croissants).
Roll out the first piece of dough into a circle with a diameter of about 20 cm and to a thickness of 2-3 millimeters.
